You should always remember to backup your data before you start the jailbreaking process. iTunes should normally create a backup of your device when it is plugged in.
Make sure you run the process of backup before attempting to jailbreak your iPhone so that you have your apps, music, files successfully stored on your computer.

How to Jailbreak iPhone – Beginning the Jailbreak Process
